Meet the Chef!
Luis Arroyo entered the food industry business in 1994 when a friend referred him to a local Black Angus Restaurant. That initial job was as a dishwasher, but he quickly advanced and began to assimilate the many various positions in a commercial kitchen including prep, line, fry and grill cook. Luis knew early on, that he had found his true vocation...a life in food service. His strong interest inspired by being around really great cooks and chefs, fueled his aspirations and intentions to become a chef one day. Fourteen years with the Kaiser Restaurant Group were true skill-establishment years as he learned every facet of the business under the guidance of and mentorship by the professionals with whom he worked. Luis volunteered many hours each day, even after his paid-shift, to not just hone his skills, but to learn as many specialized techniques as possible. That's how committed he was to his growing career.
By 2004, he was promoted to the level of his life's dream—Chef!
Chef Luis Arroyo has enjoyed establishing and preparing great food business in the Coachella Valley, including Shields Date Garden and Bistro 60 with friends and colleagues, Tom and Vanessa Brown, owners/operators of Bistro 60. Chef Luis oversees the Bistro 60 kitchen and catering, creating exciting cuisine 7 days a week in the Bistro 60 full service venue located at the Golf Club at La Quinta.
Along with Tom and Vanessa Brown, Chef Luis shares a love of and commitment to preparing and serving the freshest foods, with an emphasis on organic, sustainable, natural food including gluten-free products. Flavor, presentation and creative combinations are exciting to Chef Luis, but as important as are the meals, their
preparation and presentation, Chef Luis shares The Brown’s commitment to provide a wonderful dining experience, exceptional customer service and to build long-term relationships with customers who become just like family.
Chef Luis says, "It's about being happy in what you do, and doing it to the best of your ability. You share that joy with your staff and it is then shared with your customers."
